This course aims to train students capable of implementing food safety assessment methods and carrying out a risk analysis on a production line. Knowledge is provided so that students are able to assess the risk in a given food context, to model this risk using mathematical tools, and then to communicate on this risk. The "risk analysis" approach requires skills in microbiology, analytical chemistry, toxicology, transformation technology, epidemiology, modelling, biostatistics, computer science, etc. Moreover, Students should possess the knowledge necessary to understand decision-making processes when discussing national or international food safety regulations. They will also have to understand the sciences of information and communication in order to be able to manage communication campaigns with the public or know how to respond to an interview with scientific journalists.
